You can delete the phone number of those certain people from your smartphone and then activate the option which only shows your Last Seen to your contacts.
How to Hide WhatsApp Last Seen from Some Contacts
Here’s how you can hide your Last Seen from certain people on WhatsApp.
Step 1: Launch WhatsApp on your smartphone.
Step 2: At the top-right corner of the screen, you’ll see the icon of three dots arranged vertically. Tap on it.
Step 3: On the drop-down menu that appears, tap on the last option on the list called Settings.
Step 4: On the Settings page, tap the first option, which says Account.
Step 5: In the Account section, tap on the first option, Privacy.
Step 6: In the Privacy section under the sub-heading Who can see my personal info, tap on the first option that says Last Seen.
Step 7: By default, the toggle button next to Everyone is turned on. What you need to do is to tap on the third option that says My contacts except… .
Step 8: On the next page, you’ll see a list of all your contacts. Choose those contacts, and tap on the green icon at the screen’s bottom right corner.
There you go. Now your Last Seen on WhatsApp is hidden from all those people.
Hiding Last Seen on WhatsApp without the latest update

Follow steps 1 through 6.
Step 7: Tap on the option that says My contacts. That way, your Last Seen will only be visible to the people on your contact list.
